This one grew at 2,100 m in Guji, Ethiopia. Picked ripe, dried on raised beds, shipped to us raw.
We roast in small batches every Tuesday. Around 196 °C the beans crack like popcorn, and that's where the flavour is decided.

Water just off the boil (93–96 °C) unless it says otherwise. Weigh, don't scoop.
Bloom with 60 g of water for 40 seconds, then pour slowly in circles.
